Wild Rice Casserole with Shrimp Scampi

Serves 6.
So simple. Make the casserole as soon as you arrive home from work then let it bake. Make the shrimp 20 min. before the rice is finished.

Wild Rice Casserole
1 cup uncooked wild rice
½ pound fresh mushrooms sliced
3 Tbsp. minced onion
½ cup slice almonds
3 cups chicken broth
¼ cup butter

Preheat oven to 325°. Rinse rice under running water using a strainer or in a bowl of water; drain. Combine rice, mushrooms, onion and almonds in a 2 qt. casserole. Add broth; dot with butter. Bake, covered until rice is tender and liquid is absorbed, about 1 ½ hours.
Shrimp Scampi
3 Tbsp. butter
1 Tbsp. Extra Virgin Olive Oil
2 Tbsp. chopped garlic
¼ c. chopped shallots or sweet onion
2 pinches white flour
Dash White Pepper
½ c. chicken broth
3 tsp. Old Bay Seasoning
1 ½ lb. deveined shrimp (tails left on)

In a large saucepan over medium heat, heat oil and melt butter, sauté garlic and shallots. Add Chicken broth and dust flour into mixture, so as not to form clumps, stir and simmer until very slightly thickened about 2 minutes. Add shrimp, Old Bay and squeeze the juice of the lemon over the mixture. Cook 2 to 3½ minutes or until shrimp are pink and cooked through. Spoon the mixture over pasta or rice.
