Granola Bars

3 ½ cup quick cooking oats
1 egg, lightly beaten
⅔ c. butter, melted
½ c. honey
1 tsp. vanilla extract
2 c. dried fruit/chocolate mix (I throw in approx. ¼ c. chocolate chips, ⅛ c. candied ginger, ⅛ c. unsweetened coconut flakes, ½ c. dried pineapple and 1 c. dried cranberries, but you can use whatever you like or have on hand.)
1 c. finely chopped nuts (pick your favorite: almonds, walnuts, cashews, etc…)
½ c. brown sugar
½ tsp. cinnamon

1. Combine oats and nuts in a 15 in. x 10 in. x 1 in. baking pan coated with cooking spray bake at 350 for 15 minutes or until toasted, stirring occasionally.
2. In a large bowl combine egg butter, honey and vanilla. Stir in the fruits, brown sugar and cinnamon. Stir in oat and nut mix.
3. Press in to the baking pan coated with cooking spray. Bake at 350 for 13-18 minutes until set and edges are lightly browned. Cool on a wire rack. Cut into 36 bars. Store bars in an airtight container.
